The cuisine of the Monregalese is based upon simple preparations of this region's extraordinary local ingredients.

For guests who are interested in the culinary arts, we can arrange a variety of activities ranging from formal cooking lessons with local chefs* to "hands on" cooking with us in the Villa kitchen. Guests can learn some of our family's traditional Piemontese recipes and then enjoy the results at the table.

Here are a few examples of offerings.

Market Day / Bagna Caôda
Tuesdays and Saturdays only. The morning starts out with a shopping trip to Mondovì's delightful outdoor market to shop for all the ingredients needed to make this classic Piemontese specialty. Bagna Caôda, literally Hot Bath, is a pungent dipping sauce of olive oil, anchovies and lots of garlic. Vegetables like peppers, leeks and potatos are delicately cooked and then are dipped into the warm sauce. Afterwards we will prepare and then enjoy the Bagna Caôda.

Antipasti Tipici
A tradtional Piemontese meal typically starts out with multiple antipasti. In a typical trattoria it is not unusual to be served as many as 10 different antipasti. The Piemontese repetoire of antipasti is quite extensive and ranges from something simple like Tomino al Bagnèt Verd (a round of fresh cheese with green parsley sauce) to something complex like Vitello Tonnato (sliced veal roast with creamy tuna sauce). We will prepare several antipasti and then enjoy them with local Dolcetto wine.
Porcini Mushrooms
Depending on availability, we can go foraging for mushrooms in our woodlands and then prepare a traditional Monregalese dish such as Risotto with porcini.
Fogassa d'Siola & Farinata
Fogassa d'Siola is a classic flat-bread that is topped with sweet carmelized onions and tangy Raschera cheese. Farinata is a type of pan-bread made from chick-pea flour, olive oil, salt and herbs. Farinata is found throughout the Riviera. We will prepare one of these savory specialties and then enjoy it with some beer from a local microbrewery.
